Rava / Semolina upma


An easy, healthy and nutritious breakfast! I guess most of the malayali household will have this breakfast atleast once a week.

One for big brother & one for the little sister!


Ingredients

Rava / semolina - 1.5 cups
Big onion - 1 medium, finely chopped
Chilly - 2 (as per your tolerance)
Ginger - 1 inch piece
Curry leaves - 1 sprig
Urid dal - 1 tbsp
Grated coconut - 1/2 cup
Green peas (not the dried version) - 8-10
Finely chopped carrot - half of a carrot
Cashew nut - 8-10
Oil - 1 tbsp
Salt - as per taste
Mustard seeds - 1/2 tsp
Water - 3 cups (double the amount of rava)



Method

Slightly roast the rava in the kadai till its hot. Careful not to burn the rava. Transfer to a plate and keep it aside.
In the same kadai, add 1 tbsp oil. When its hot enough, crackle mustard seeds. Add the urid dal, stir it till the dal turns light brown.
Now add the chopped ginger, onion, chilly & curry leaves. Stir till the onions turn light pink.
Add the chopped carrot, green peas and any other vegetables if adding. Saute till they are half cooked. It won't take more than a min.
Now add water, salt and grated coconut. Mix well and let the water boil.
Once the water has boiled, add the roasted rava slowly, stirring continuously.
Stir thoroughly to ensure that there no lumps of rava. Keep it on the heat for a minute, and after that switch off the flame.
Cover tightly and let the upma rest for atleast 10 min.
After 10 min, open the lid and give the upma  a good mix.
Garnish with ghee roasted cashew nuts.
