Egg thoran .... my way!


You must be wondering what's so special about this recipe...we all make egg burji atleast once or twice a week... I just thought of blogging away the scrambled egg thoran that I make and something which we all love. So here goes the recipe.


Ingredients

Egg - 2
Big onion - 1 medium, finely chopped
Chilly - 2 , chopped or slit
Curry leaves - 1 sprig
Grated coconut - 1/2 cup
Tomato - 1, chopped
Salt - as per taste
Chilly powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - a pinch


Method

Beat the egg vigorously, add some salt and keep aside.
In a heated kadai, add the chopped onions, chilly & curry leaves and toss them till the onions turn light brown. Add salt , so that it speeds up the browning process.
Add chilly powder, coriander powder & turmeric powder and saute till the raw smell is gone.
Add the chopped tomato and saute till gets mushy and slightly dry.
Add the beaten egg & grated coconut to this mixture and stir vigorously. Check and adjust salt in this stage, when the egg mixture is still wet. Keep stirring till the egg mixture becomes dry.
Garnish with some coriander leaves and serve with some hot rice.
